This was one of the very first recipes I ever wrote, and it quickly became one of my most requested. I’ve made them countless times for myself, friends, and family, and at this point, I could probably make them in my sleep. Truthfully, I’ve made them so many times that I completely overlooked the fact that they’ve never actually debuted on my website. Sorry for the wait 🤎
Now that I’m settling into my new apartment (I know we have SO much to catch up on), I’ve been especially excited to stock my freezer with a few variations for busy mornings. They’re flaky, packed with your breakfast favorites, and incredibly versatile, which is exactly why they’ve become a staple in my kitchen.
There’s something so satisfying about having a homemade breakfast ready to go especially when it can go straight from the freezer to the oven and still feel special. These are my favorite breakfasts to have on hand: easy when I need them to be, but still very much worth looking forward to.
Million Dollar Bacon, Egg & Gruyère Puff Pastries Recipe
Makes: 6 pastries
Prep: 15 minutes
Cook: 25 minutes
Total: ~40 minutes
Ingredients
2 sheet frozen puff pastry, thawed
3 large eggs (you can use more eggs, if you’d like)
6 slices thick-cut bacon
2 tbsp light brown sugar
1 tbsp maple syrup
½ tsp freshly cracked black pepper
¼ tsp cayenne pepper
1 cup shredded Gruyère
1 tbsp water
1 tbsp butter or oil
1 egg, beaten, for egg wash
Flaky sea salt, optional
Instructions
Make the million-dollar bacon.
Preheat oven to 375°F. Line a baking sheet with parchment. Arrange bacon in a single layer. Combine brown sugar, maple syrup, black pepper, and cayenne, then brush over the bacon.
Bake for 18–22 minutes, or until deeply caramelized and slightly crisp. Transfer to a rack or parchment-lined plate and let cool.Make the eggs.
Whisk the eggs with water, a pinch of salt, and black pepper. Melt butter or oil in a nonstick skillet over low heat. Add eggs and gently stir until just barely set. Remove from heat. They’ll finish cooking in the oven.Prepare the puff pastry.
Increase oven temperature to 400°F. Cut the puff pastry into 12 rectangles. Score a smaller rectangle inside each piece, leaving about a ½-inch border, being careful not to cut all the way through.Fill.
Divide the halved million-dollar bacon among the pastries, keeping them within the scored border. Top each with Gruyère and eggs. Don’t be shy… you can even add a little parsley!Fold and egg wash.
Bring the corners toward the center, gently overlapping them and sealing the edges with a fork. Brush the exposed pastry with beaten egg and sprinkle with flaky sea salt.Bake.
Bake for 18–22 minutes, or until the pastry is puffed, deeply golden, and the Gruyère is melted and bubbly.

Keep the eggs soft. The eggs will continue cooking once they’re tucked into the puff pastry and baked, so pulling them off the heat while they’re still creamy gives you the best texture in the finished pastry.
Let the bacon cool before assembling. Million-dollar bacon gets wonderfully sticky and caramelized as it cools, which makes it much easier to break and layer into the pastries.
Don’t be shy with the Gruyère. It melts beautifully and brings a nutty, savory richness that pairs especially well with the sweet-and-salty bacon. If you don’t prefer Gruyère, you can use sharp cheddar.
For an easy make-ahead breakfast: Assemble the pastries the night before, cover, and refrigerate. Add the egg wash right before baking. You can also freeze them unbaked and bake straight from frozen, adding a few extra minutes to the baking time.
And if you’re making these for yourself: Make the full batch. They reheat beautifully, and having a few tucked away in the freezer makes a very good breakfast decision later.
