Brown Butter PB&J Rice Krispie Treats
Some flavors don’t need reinvention. They just need a better outfit.
Peanut butter and jelly has been carrying childhood for decades. From lunchboxes, brown paper bags, cafeteria tables, after-school hunger emergencies, it has always hit the spot. Sweet, salty, soft, and dependable. A classic for a reason.
So instead of trying to turn PB&J into something unrecognizable, I wanted to keep the heart of it intact and give it a little upgrade.
Enter: Brown Butter PB&J Rice Krispie treats.
My recipe has everything you want from the original pairing. The creamy peanut butter richness, fruity jam, and nostalgic comfort, but tucked inside buttery, gooey marshmallow cereal bars that feel a little more fun yet a little more indulgent.
Why These Work
A lot of nostalgic desserts lean overly sweet. The key here is balance:
Peanut butter brings saltiness, richness, and depth
Jam adds brightness and fruity contrast
Marshmallow keeps everything soft and chewy
Brown butter rounds it out and gives that bakery-style finish
Every bite lands somewhere between comfort food and elevated dessert.
Brown Butter PB&J Rice Krispie Treats Recipe
Ingredients
6 cups Rice Krispies cereal
6 tablespoons unsalted butter, browned
1 (10-ounce) bag mini marshmallows
½ cup creamy peanut butter, warmed
1 teaspoon vanilla bean paste
¼ teaspoon salt
¼ cup strawberry, raspberry, or grape preserves, warmed
Optional: flaky sea salt for finishing
Instructions
Line an 8x8-inch pan with parchment paper or lightly grease it.
In a large pot, brown the butter over medium-low heat until amber in color. Add the marshmallows and stir until smooth.
Add the vanilla and salt. Stir until glossy and fully combined.
Remove from heat and fold in the Rice Krispies until evenly coated.
Drizzle warmed peanut butter over Rice Krispie treats until combined.
Press half of the mixture into the prepared pan.
Warm the preserves slightly so it loosens, then spoon or drizzle half over the surface.
Add the remaining cereal mixture on top and gently press into an even layer.
Finish with the rest of the preserves swirled across the top.
Let cool for 20-30 minutes before slicing into squares.
Finish with a tiny pinch of flaky sea salt, if desired.

Use creamy peanut butter for the smoothest texture.
Warm jam = easier swirling. Just 10–15 seconds in the microwave helps.
Don’t over-press the mixture into the pan or the bars can become dense.
Raspberry jam gives the best tart contrast if you prefer desserts that aren’t too sweet.
